{"id":345,"date":"2012-01-29T06:23:00","date_gmt":"2012-01-29T06:23:00","guid":{"rendered":"http:\/\/truthindeed.com\/blog\/?p=345"},"modified":"2016-02-11T07:36:28","modified_gmt":"2016-02-11T07:36:28","slug":"vegetable-salad","status":"publish","type":"post","link":"https:\/\/truthindeed.com\/blog\/2012\/01\/29\/vegetable-salad\/","title":{"rendered":"Vegetable salad"},"content":{"rendered":"<p>Ingedients:<\/p>\n<p>1 zucchini<br \/>\n1 summer squash<br \/>\n1 green onion- (scallion)<br \/>\n1 small red beet- peeled<br \/>\n\u00bd cucumber- peeled<br \/>\n1 avocado- pit removed<br \/>\n\u00bd cup frozen green peas- defrosted<br \/>\n1 stalk of celery<br \/>\nRomaine lettuce<br \/>\nFresh spinach<br \/>\nCilantro- handful, chopped<br \/>\nChickpeas\/garbanzo beans- cooked- optional*<br \/>\nWhite beans- cooked- optional*<\/p>\n<p><em>Cut all veggies, including lettuce, into small pieces; mix with <a href=\"https:\/\/truthindeed.com\/blog\/2016\/01\/04\/creamy-herb-dressing\/\" target=\"_blank\">creamy herb dressing<\/a> in your bowl. Makes 3 generous sized servings.<\/em><\/p>\n<p><em>Can be stored, without dressing on it, for about 2 or 3 days in the fridge.<\/em><\/p>\n<p><em>*I also add cooked chick peas- also known as garbanzo beans; or cooked white beans for variety. I soak the beans overnight, then cook in a pressure cooker for 10 minutes.(Beans can be eaten either warm or cold.)<\/em><\/p>\n<p><em>NOTE: you can add any raw vegetables or beans to your salad.
