{"id":1127,"date":"2016-01-04T07:24:59","date_gmt":"2016-01-04T07:24:59","guid":{"rendered":"http:\/\/truthindeed.com\/blog\/?p=1127"},"modified":"2018-01-21T07:49:53","modified_gmt":"2018-01-21T07:49:53","slug":"fried-banana-cakes","status":"publish","type":"post","link":"https:\/\/truthindeed.com\/blog\/2016\/01\/04\/fried-banana-cakes\/","title":{"rendered":"Fried Banana Cakes"},"content":{"rendered":"<p>These are like a fluffy pancake.<\/p>\n<p>Ingredients:<\/p>\n<p>2 cups millet flour<br \/>\n1\/4 cup coconut sugar*<br \/>\n1\/2 teaspoon cinnamon**<br \/>\n1\/2 teaspoon nutmeg**<br \/>\n1 teaspoon baking powder- optional***<br \/>\n3\/4 cup + 1 tablespoon water<br \/>\n4 ripe bananas- chopped<\/p>\n<p><em>Directions:<\/em><\/p>\n<p><em>Whisk together dry ingredients in large mixing bowl. Add water and stir to mix- batter will be thick.<\/em><\/p>\n<p><em>Add bananas and stir well. (I use a wooden spoon.)<\/em><\/p>\n<p><em>Heat non-stick frying pan on medium heat until hot. (I use a ceramic pan.) Pour pancake onto hot pan and cook on one side until bubbles disappear. Then turn pancakes over, cover the pan; turn the burner down to low and let them finish cooking until they fluff up. <\/em><\/p>\n<p><em>You can make large cakes or small ones- depending upon the size of the spoon you use to drop the batter onto the pan.<\/em><br \/>\n<em>* You can use less sugar if you are going to top these with syrup.<\/em><br \/>\n<em>** If eating plain, you can use 1 teaspoon each of seasonings.<\/em><br \/>\n<em>*** You can leave out the baking powder and they will be flat and more dense- almost like a fritter, but still higher than a flat pancake.<\/em><\/p>\n","protected":false},"excerpt":{"rendered":"<p>These are like a fluffy pancake.
