ALL of my recipes are vegan- (animal product free); refined white and brown sugar-free; corn-free; gluten- free and nightshade-free.
Most are also salt and oil free as well.
The most common nightshade foods are: tomatoes; white potatoes; eggplant; all varieties of peppers- (except for the seasoning black pepper); and some seasonings which are made with different varieties of peppers- such as chili powder, cayenne pepper, etc.
I do not use ANY butter, margarine, or shortening- not even vegan versions.
I do NOT use ANY packaged food substitutes- like Earth Balance Butter; Ener-g egg replacement; vegan chocolate chips; vegan cream cheese; etc. (I get VERY frustrated when I see a recipe that looks good, and then it has those kinds of processed food ingredients in it!)
I use green salt, known as salicornia- IF I use salt at all. It is not actually salt, but is rather a sea vegetable that is dehydrated and ground into a powder which resembles salt in taste. I use ground up black sesame seeds in place of pepper. But when I do use pepper, I use Tellicherry black pepper; and MANY other seasonings. (Please read the labels on your spices carefully- a lot of them contain chemicals, preservatives, gluten and/or nightshades- such as cayenne pepper.)
I pan saute my foods using water and not oil. I use either stainless steel or white ceramic, non-stick pans.
I write most of these recipes myself, but I will give credit where due to anyone else whose recipes that I post.
The appliances that I use for most of my food preparation are the Ninja Chef blender, a Cuisinart spice and nut grinder- to grind seeds and spices, and an Instant Pot pressure cooker.
I bake in a counter top oven and a microwave. I use Anyday brand bowls in the microwave.
