Buckwheat pancakes

Ingredients:

2 teaspoons flax seed- ground; or 2 tablespoons flax meal

½ cup water

2 cups buckwheat flour

3 teaspoons aluminum- free baking powder

½ teaspoon Himalayan salt

¼ teaspoon cinnamon

1½ cups water

2 tablespoons unsweetened applesauce

Directions:

Add ground flax seeds or flax meal to ½ cup water and let sit for about 10 minutes.

Mix dry ingredients in large bowl. (I use a wire whisk).

Mix 1 1/2 cups water and applesauce together in a small mixing bowl, then pour this mixture into dry ingredients and mix well using an electric mixer or wire whisk.

Heat up a non-stick skillet, then pour a spoonful of batter onto hot skillet and cook pancakes until done on both sides.

Makes about 8 large, or 12 small pancakes.

Serve with either pure maple syrup, or applesauce spread on top of them.

They are also delicious reheated as a snack- all by themselves. (They are so moist and tasty that you don’t need to disguise the flavor with any toppings!)
