Fruit pudding

This is basically a smoothie recipe with raw pumpkin, sunflower, chia and flax seeds added to thicken it- as well as to add protein. We eat this for breakfast.

(Serves 2)
Ingredients:

2 cups frozen blueberries

1/2 cup raisins

1 cup frozen mixed berries

Handful of greens- kale, spinach, or lettuce

2 tablespoons raw sunflower seeds*
2 tablespoons raw pumpkin seeds*
2 tablespoons raw flax seeds*
2 tablespoons chia seeds*
½ inch chunk of fresh ginger*, (or ½ teaspoon dried, if you don’t have fresh ginger on hand)-optional
1 teaspoon of cinnamon- optional
½ teaspoon nutmeg- optional
Water- optional

Directions:
If you have a high speed blender, put all ingredients into blender jar and blend until mixture is smooth and thick;
If you do not have a high speed blender, grind all seeds first in a coffee bean grinder- or spice and nut grinder; then add to fruit in blender and blend until smooth and thick.
If mixture is too thick to blend, add a little water to thin it out.
* We cut fresh ginger into chunks and freeze. You do not need to peel it. Just wash well with a vegetable brush.
*ALL seeds are optional- however, they make it thick like pudding instead of runny like a smoothie. Feel free to use whatever seeds you have on hand and don’t worry about the quantity- you can adjust that as to how much fruit you use. If it is too thick, add more water; too thin- add more seeds!

NOTE:
This is a VERY easy recipe to alter- for example, you may use more or less fruit to adjust the quantity for the amount of people that you are making it for; you may use more or less seeds; and you may use any type of fresh, frozen or dried fruit that you have on hand.

You may use ANY type of greens that you want to, but romaine lettuce will give it a slightly bitter taste. (Kale and spinach have no taste- you will not even know they are in there, and that is why we use those greens in particular!)
