These are like a fluffy pancake.
Ingredients:
2 cups millet flour
1/4 cup coconut sugar*
1/2 teaspoon cinnamon**
1/2 teaspoon nutmeg**
1 teaspoon baking powder- optional***
3/4 cup + 1 tablespoon water
4 ripe bananas- chopped
Directions:
Whisk together dry ingredients in large mixing bowl. Add water and stir to mix- batter will be thick.
Add bananas and stir well. (I use a wooden spoon.)
Heat non-stick frying pan on medium heat until hot. (I use a ceramic pan.) Pour pancake onto hot pan and cook on one side until bubbles disappear. Then turn pancakes over, cover the pan; turn the burner down to low and let them finish cooking until they fluff up.
You can make large cakes or small ones- depending upon the size of the spoon you use to drop the batter onto the pan.
* You can use less sugar if you are going to top these with syrup.
** If eating plain, you can use 1 teaspoon each of seasonings.
*** You can leave out the baking powder and they will be flat and more dense- almost like a fritter, but still higher than a flat pancake.
